Skirt steak and the Ninfa’s story in Houston: a real reference photograph, not a dish photographed at DILIJAN OLD WINERY.

One skirt-steak story begins at a family tortilla factory in Houston. According to Ninfa’s, in 1973 Ninfa Laurenzo grilled skirt steak there and served it in handmade tortillas. It is a well-known chapter in the rise of fajitas. Skirt is a long cut with a pronounced beef flavour and visible fibres. It is often sliced across the grain for easier eating.

Ninfa’s story is one chapter in the popularisation of fajitas. It does not mean that one person invented the dish, or that it did not exist before 1973. This account follows the restaurant’s own history.
